Chicken Pot Pie

Preheat the oven to 350

Chop about 3 small onions and a carrot into your dutch oven, add copious amounts of butter.

Cook until the onions are soft

Cube however many potatoes you want, add to the pot, add salt and pepper... the aroma is starting to fill the kitchen

Toss in 2 Chihuahuas (they are pouting because they smell the bacon and don't see any coming their way)

Cut and sear 2 chicken breasts, add chopped bacon just because you are an adult and you can do whatever you want. Add chopped sage to the mix. Fried sage is amazing, in case you were wondering...


Add the chicken to the pot, add a litre (4 cups) of milk (I used non fat tonight 'cause that's what I had)


Make your favourite biscuit recipe and add a bit more than required milk to it, place it over top of the 'pie' mixture


Bake for about 30 minutes. And if you can make more of a mess than this I'll clean your oven. Thank God for self cleaning ranges


Royanne and I are just going to split this right down the middle tomorrow.

Welcome Home Lucy

My life pretty much works like this... phone rings ...

"Hey"

"I know of a little girl chi that needs a new home, can you take her?"

"stupid owner, neglectful, dog 14 months old, well socialized, scared since being bumped around"

In walks Lucy... plump and cute and in bad need of a pedi. And very short compared to what I'm use to- which is supermodel tall Maisie. The dogs smell and walk around each other, the cats are just idiots. Come bed time Lucy is chill and under the covers passed out. Didn't wake up until I pulled her out at 7am, where she promptly went to the back door and barked, out, did her business, in... to the treat cupboard. I'm sure she'll fit in just fine.

Apple Pie

First you should gather what you need otherwise you'll be like me asking "Where is the friggin' lemon reamer!?"

  • 5 lbs of apples
  • 1 lemon
  • 2 pie crusts (I buy, I don't make... shhhhoosh!)
  • cold butter (go all Paula Dean if you want to, I don't judge)
  • 2 cups of sugar
  • 1 tablespoon on cinnamon
  • dash o' salt
  • whatever egg wash version you like
Get your apples and lemon


Peel the apples


Cut and cube the apples roughly and add to a bowl of cold water with the lemon. They won't turn brown if you do this. If you like brown apples skip this (weirdo).


Get your pie crusts ready. I don't make a great crust and they're time consuming so I buy them. I like these ones and they roll out much bigger than they look. Use what you like, use grahame crackers for all I care.


Drain the apples well. Sometimes I forget to pick out the lemon seeds. Be thankful I'm making a pie, I could be watching re-runs of the Biggest Loser.
Toss the apples (and seeds) with the cinnamon, salt and sugar.

Fill the crusted pie plate- over fill it!
Cut the butter and place it all over the top.


Get an egg wash going... and brush the pie crust.


Get fancy


Bake in a 400 degree oven for about 40 minutes. My rule is until the bottom of the crust is... crusty.


Not impressed the cut outs disappeared in the baking.


Regardless. Apple Pie.
