Scalloped Potatoes


Melt 2 cups of cream with 1/2 cup of butter


Start peeling potatoes

Slice those potatoes up


Grab the casserole dish your mom made in 1978 when she was going through her pottery phase.


Butter that casserole dish, put in potatoes and cover with cream/ butter. Salt and pepper.


Bake at 425 for an hour, near the end throw on some cheese.


Add one perfect chicken breast (enough for 2 adults and 1 chihuahua).


Voila


I ate some of this shortly afterwards. I was too full to really do any damage to the container... next time.

Breakfast at Sophie's Cosmic Cafe



This was without a doubt in my mind the best breakfasts I have ever had. Jenn ordered the pancakes, I had the Sante Fe Eggs Benny (Benny on cornbread with guacamole and salsa, beans and crisp fried potatoes). Both so good... wish I could eat it everyday. But then I wouldn't be going to Sophie's, I'd be going to Jenny Craig.

Lunch time picnic

This Cupcake...


Was the grossest thing I have put in my mouth in a long time, and that's saying a lot! Suppose to be Red Velvet with a cream cheese icing. Yuck! It smelled very Duncan Hines on a bad day. The icing had crusted over and that crust extended a little too deep into the excessive icing mound for my taste. I always think places that put huge amounts of icing on cake are trying to hide what's underneath. I'll go with that theory here. The cupcake didn't even fill the sad little medium sized liner. It was dense like Play-Doh. Smelled like it to. All this for $2.95. Bah!! Oh and one more thing- if you get one cupcake to go, they loosely put it in a small brown paper bag. Attractive? I should say nay.

You will never see me set foot in Pink Sugar Cupcakery again. If you want to, they're located at 773 Fort Street in Victoria. But hurry, judging from this particular cupcake and the fact every time I have ever gone by the young lady at the counter was alone and reading a book... they might not be around long.

Knit Wits





I'm posting Sunday's Knit Wit in advance since I'll be away... I hope it isn't bad luck!!

Cream Cheese Ice Cream


Friday afternoon, 3:30pm, I had the worst need for ice cream! So I ran across the street from my office, right into Marble Slab (convenient huh?) and laid down $5.50 (yeah... seriously) for ONE SCOOP! of Cream Cheese Ice Cream with salted pecans blended in. So worth it. Shortly after- I felt sick.

Where's the dog!!?


I had a bit of a panic attack this morning. I couldn't find the dog. I looked in all the usual spots, calling as I went... finally as I'm opening the front door (you know, in case she learned to open it herself and left) I see the blankets bopping around and out she pops. Looking at me all bleary eyed like I just woke her up.She just sneezed then went right back under. Sorry Poupette!
